The origins behind the secret recipe of our “Original Fishcake” stems from the creator and founder of the Bondi Seafood Company, Dan Kennedy. The fishcake recipe has been passed on through his family for generations, dating back to his late Great Grand Mother. At Bondi Seafood Company, we know the importance of understanding exactly where the food you share with your family comes from and how it is made. That’s why we make our easy fishcakes with 100% Australian seafood and ingredients. While we will never reveal the secret family recipe that has survived generations within the Kelly family, we believe our customers have a right to know that our fishcakes are made with natural, traceable food. We source the best quality ingredients to ensure our artisan fishcakes taste delicious. We make our fishcakes with wild-caught fish (30%), potato, onion, eggs, breadcrumbs (wheat flour, salt, sugar, yeast), garlic, parsley, salt, pepper.

The dominant ingredient in our easy fishcakes is Blue Grenadier fish, which is also commonly known as Hoki. The fishermen we have chosen to partner with catch Blue Grenadier fish off the coast of Eden, the southern-most town of the Sapphire Coast of New South Wales. We partner with fishermen who share our values of sustainable and ethical fishing practices. The Blue Grenadier you can find in our fishcakes is wild-caught using sustainable methods.

Bondi Seafood Company fishcakes are hand-made with 100% Australian seafood and ingredients, including Blue Grenadier fish, potato, onion, eggs, breadcrumbs (wheat flour, salt, sugar, yeast), garlic, parsley, salt, pepper. Our easy fishcakes consist of a market-leading 30% fish.

We have partnered with the best Australian seafood fisheries producers and farmers to ensure we deliver quality our customers can taste. We value provenance and believe that the best tasting product comes from people who genuinely care about their environment. Our retail partners are best known for their commitment to sustainable and ethical practices.

Aptly named, Blue Grenadier have a blue/silver colouring with dark blue fins. They are a deep-water fish species and have a delicate, sweet flavour that pairs superbly with our artisan ingredients. Blue Grenadier is the best fish for fishcakes because they have a natural oiliness and sweetness. Our fishcakes can be pan-fried, microwaved, placed in the oven or fried.

Our fishcakes contain fish, gluten, and egg. Additionally, our fishcakes may contain traces of milk. Our chilli variety of fishcakes also includes chillis. Be sure to check the label carefully to ensure that all 100% Australian ingredients are safe for you and your loved ones to consume.

We make our easy fishcakes for the convenience of our customers. They are perfect for mid-week dinners or entertaining as they are effortless to cook. Before eating the fishcakes, be sure to store them below 5°C.

Air Fry
Short on time? We’ve got you covered. Our fishcakes are naturally oily, so if you’re looking for a healthier alternative, they’re also compatible with air fryers. Simply put them on the tray for the air fryer, turn to 180 degrees and air fry for 10 minutes. The air frying method brings out the taste of our nine ingredients, complimenting the rich flavour of the Blue Grenadier.

Deep-Fried
Ready to elevate your Bondi Seafood Company fishcakes? One of the most delicious ways to eat our fishcakes is to deep fry them. Simply drop them a deep fryer and allow them to sit until they are golden and crispy on the outside.

Pan Fry
Heat our healthy fishcakes through in a pan with a light coating of cooking oil. Flip the fishcakes gently to ensure both sides are thoroughly heated through and the outers golden brown. Let them sit for 60 seconds before digging in. Delicious!

Oven Bake
Oven-baked fishcakes are not only delicious, but they’re also super easy to throw in with some veggies for dinner. The natural oiliness of the fishcake will keep everything in the same oven dish moist. Set the oven to 180°C and place the fishcakes on a tray lined with oil or baking paper. Set the fishcakes in the oven for approximately 20 minutes and flip the fishcakes in between. Leave them in longer if the fishcakes are not yet golden – trust us, that perfectly-baked crunch is worth the wait. Now you’ve got healthy fishcakes ready to feed your family!

The significant part about our fishcakes is that they’re highly versatile, so virtually anything you can find in the fridge is likely to pair well. We suggest serving the fishcakes with a hearty salad, with vegetables, or as a burger. In summer, fishcakes are best served as part of a nutritious yet light meal. We recommend opting for a salad dressed with a balsamic vinaigrette or a creamy Caesar dressing. As a mid-week meal, the easy fishcakes will lift any meal that includes some simple steamed vegetables. If you’re entertaining, some roast or BBQ vegetables will please almost everyone. As a brunch dish, serve our fishcakes with a creamy poached egg on top with wilted spinach and tomato relish.

We source the Blue Grenadier in our fishcakes from sustainable fisheries that care about their environment. The Australian Fisheries Management Authority (AFMA) monitor the sustainable fishing of Blue Grenadier to ensure the amount of this fish species caught each year is managed sustainably.

We source every single ingredient in our fishcakes from Australian producers.

The Hazard Analysis Critical Control Point (HACCP) is an expert food science organisation that provides an official food safety certification. HACCP Certifications indicate that the food produced by a business meets stringent requirements of food authorities in Australia. The HACCP Certification aims to identify and control hazards likely to occur in food handling operations, audit control methods and provide corrective actions when a hazard falls outside of control. The organisation regularly review food businesses for compliance at least once every 12 months.

The way in which food businesses become certified is by undergoing regular audits by employees of HACCP that have depth and breadth of experience in the food science discipline. Auditors are approved for regulatory audits in NSW to A identify, evaluate and control hazards that are significant for food safety.

The HACCP certification HACCP indicates a high standard of food safety and consists of seven principles. We will provide a brief outline of the seven principles below.

Principle 1: Auditors conduct a hazard analysis.
Principle 2: Auditors identify Critical Control Points (CCPs).
Principle 3: Auditors establish critical limit(s).
Principle 4: Monitor the control of the CCP.
Principle 5: Determine the corrective action in the instance of a particular CCP not in control.
Principle 6: Procedures for verification to confirm that the HACCP system is working are established.
Principle 7: All procedures and records are documented, and a HACCP provided.

We adhere to the HACCP Certification principles and are committed to maintaining the food safety regulations as established by the HACCP auditors.
